Milanese chef Giorgio Nava’s homage to the meat in all its forms is a carnivore’s paradise, serving the finest cuts of Romagnola beef, Dorper lamb and game, all grown on Giorgio’s own Karoo farm. The provenance, flavour and age of each cut is explained to the diner in great detail, and adventurous choices like hangar steak or the 1.2kg T-bone are encouraged. The menu has a range of delicious antipasti, insalata and primi to start, while the mains cover all the usual grill options, plus favourites like ravioli filled with slow-baked lamb shoulder, prime rib on the bone and the pan-fried sweetbread with white wine, butter and sage.
